De Keukentafel is a small-scale fine dining restaurant in Oosterzele, featuring its own organic farm. We serve a single tasting menu starring seasonal vegetables, harvested fresh daily on the farm, supplemented with top-quality regional products. The menu follows the harvest and changes with the seasons. We welcome a limited number of guests per service, who sit together at a long table. We extend our sustainability principles to every aspect of the business. Water glasses are made from wine bottles, old menus are recycled into new paper, and food waste is returned to the compost. We work exclusively with organic products. The interior is constructed from circular materials. We cook using solar energy, utilize a water purification system, and work with rainwater via wells. Additionally, we continue to explore regenerative farming techniques and apply them on the farm.
Our guests dine in the heart of the farm, where we grow and harvest our own vegetables. All vegetables served are exclusively home-grown; we do not order any additional vegetables. With this, we aim to inspire our guests and demonstrate that gastronomy can be both refined and radically local and seasonal.
We believe that chefs have a significant influence on what people eat and, consequently, on how food is produced. What appears on a menu influences guest choices, and thereby indirectly influences agriculture and supply chains as well. By growing our own vegetables and purchasing nothing, we make that influence very tangible. The menu does not follow the market, but the harvest. This is a conscious choice that breaks dependency on supply chains and demonstrates just how delicious freshly harvested and locally grown produce truly is!
We collaborate with like-minded local makers and producers such as De Vroente, Hinkelspel, Volle Maan, Ginstbronnen, Adriaan Brouwer, De Koolmees, De Zwaluw, IJzerkotmolen, Padoo en Cruydt and so many more, who each contribute in their own way to a strong local network.
