We are a traditional lambik brewery and authentic geuze blendery, rooted in the unique terroir of Pajottenland. Each chapter, from humble beginnings as an inn to becoming a renowned brewery, has been guided by a sense of responsibility to preserve and evolve the craft. We see ourselves as custodians of a rich cultural legacy, ensuring that the traditions of lambic and geuze continue to thrive for future generations.
Our offerings are a testament to meticulous craft and uncompromising quality. We produce traditional lambic, geuze, and fruit lambics, each shaped by the natural rhythms of the seasons and the unique variables of our environment. Every beer is the result of a manual brewing process, spontaneous fermentation, and extended aging in oak barrels—never rushed, never standardized. Our geuze is a blend of lambics aged one, two, and three years, bottled to mature further and develop its complex character. Fruit lambics are crafted by macerating whole, locally sourced fruits—never juices or syrups—resulting in authentic flavors that reflect our region. The lambik-O-droom, our tasting room and garden terrace, offers visitors a direct connection to our barrel room and the opportunity to experience our beers in their purest form. We also host guided tours and events, inviting both aficionados and newcomers to discover the depth and diversity of our craft.
Our impact on the gastronomic ecosystem extends far beyond the brewery walls. We are deeply invested in reviving and sustaining the agricultural and cultural fabric of our region. By collaborating with local farmers to reintroduce organically grown, old cereal varieties, we help restore biodiversity and reconnect brewing with its agricultural roots. Our initiatives, such as the Cereal Collective and the organized picking of Schaarbeekse sour cherries, foster community involvement and support small-scale producers. We believe in the power of collective action—engaging fruit growers, artisans, and neighbors to create a vibrant, interconnected food culture. Through educational tours, open brew days, and inclusive events, we share our knowledge and passion, nurturing appreciation for traditional methods and regional products. We work closely with local farmers like Hilde and Seppe from Dubbeldoel, who cultivate barley and wheat for our brews, while our spent grains return to their farm as cattle feed—completing a regenerative cycle. We prioritize direct relationships with organic fruit growers and are actively involved in programs to multiply and preserve rare local fruit varieties. Collaborations with craftspeople—such as potters, basket weavers, and glassblowers—ensure that every element of our production honors tradition and reduces environmental impact.
