The market gardens of La Falize are located on a family estate, preserved for generations, perched on a rocky escarpment overlooking the Hoyoux River, which gave the place its name. On these lands steeped in history, cultivated organically since 2000, a single conviction guides every action: to grow distinctive local produce while respecting all living things. The foundation of this approach is to produce the very best that this unique terroir has to offer. Organic farming, biodynamic practices, heirloom seeds, and the use of natural organic matter are just some of the tools employed in the rediscovery of authentic flavor. Everything is done vertically, from seed to plate, with a commitment to taste and excellence as its raison d'être.
The market gardening calendar faithfully follows the seasons. From mid-April to June, green asparagus grows in clay and silt soil, which gives it a truly subtle flavour. From mid-May to the end of June come the strawberries, harvested from the richest soils on the estate, followed in June and July by cherries, a rarity in organic farming due to their meticulous care, cultivated in three varieties near the vineyards. Summer belongs to the tomatoes: some thirty varieties, mostly heirloom, whose seeds are multiplied each year. Sweet potatoes, which thrive in the Walloon terroir, and carrots, left in the ground and harvested by hand to preserve their freshness and nutritional value, are also grown.
La Falize aims to demonstrate that the agricultural model can change. Faced with the decline of biodiversity in our countryside, the farm has taken strict measures to restore it and increase its capacity to sequester carbon. By cultivating heirloom varieties and multiplying its own seeds, market gardening is finally helping to preserve a genetic and gustatory heritage that intensive agriculture nearly wiped out.
