Het Polderveld is an organic farm located in Westkapelle (Knokke-Heist). On the rich polder soil, we cultivate a wide variety of vegetables, herbs, flowers, and fruit, while our flock of robust Herdwick sheep grazes year-round on the old polder meadows. Our work is based on organic principles: no artificial fertilizers, no pesticides, but relying on the power of the soil, nature, and the seasons. In this way, we are building agriculture that is not only good for the table, but also for the future of this unique polder landscape.
The vegetables at Het Polderveld are grown with an eye for seasonality and flavor, from celeriac and courgette to fennel, pumpkin, and lesser-known crops such as chicory and apple aubergines. Our selection reflects the richness of the season and the creativity that emerges when farmer and chef think together about what the soil has to offer. In addition to vegetables, we also offer meat from our Herdwick sheep, an exceptionally self-sufficient breed that lives entirely outdoors and feeds on grass and herbs from the pasture.
Het Polderveld plays a significant role in the local food landscape, and this extends beyond the farm itself. Through Lekker van Hier, an online ordering platform from the Bruges region, private individuals can order fresh vegetables weekly and thus connect directly with the origin of their food. The societal impact goes even deeper: the farm supplies vegetables to AZ Zeno, the hospital serving Knokke-Heist and Blankenberge, where around 1,200 meals are prepared daily for patients, as well as for nursing homes and daycare centers in the region. This partnership demonstrates that local, seasonal, and organic food is not just for the gourmet, but deserves a place in every kitchen — including those in the care sector. The exemplary role this sets is significant and inspires others to look differently at what ends up on the plate.
The collaboration with AZ Zeno is structured according to the principles of Community-Supported Agriculture (CSA): at the start of each season, we create a cultivation plan together with the hospital, tailored to the needs of the kitchen and the possibilities of the land. The hospital's creative chefs are open to new flavors and unfamiliar crops, making the collaboration a true exchange between craftsmanship in the field and craftsmanship in the kitchen. In the summer, the harvests are delivered fresh daily. With every harvest, we reaffirm our conviction that good food, grown on good soil, makes a difference for people and the community.
